TURMERIC COCONUT BASMATI RICE
Pride Of India Brown Basmati Rice makes dishes that you will never forget. Our organic rice can simply be boiled in a pressure cooker or microwave oven and combined with your favorite curry to make the perfect Indian dish. It is also the perfect fix to one of those lazy evenings as you can make our brown basmati rice into an elaborate dish of its own in a couple of simple steps.
Rinse the rice, drain the water and set it aside. Heat 1 tbsp coconut oil in a large pot on medium heat. Cook 1 chopped onion and 2 chopped garlic cloves until soft. Add 1 tsp turmeric and cook for a minute, stirring constantly.
Add the rice and stir until it is fully coated yellow. Add 15 oz of coconut milk, 2 cups of vegetable broth, and salt to taste. Bring to a boil, then cover and reduce the flame to low until the rice is tender. Remove from heat and keep covered for about 10 more minutes.
Garnish with some cashew nuts on top and a squeeze of lime juice and serve hot.
