Product Highlights
• The grapes used to make Segura Viudas Semi Seco, are grown in vineyards from many different parts of the region. In this way we can use the specific attributes of each site to create a complex, balanced Champagne
• The grapes are 100% hand picked, and taken to the winery in 25kg capacity self-draining plastic boxes, to prevent them from splitting and the juice becoming oxidised, with a consequent loss of freshness.
• The grapes are pressed in whole bunches to retain their individual identity. The juice is naturally settled, over a 24 hour period to produce fruitier and more elegant wines.
• The blend is made from 8 different base wines to create the cuvée for a Cava which will be harmonious, balanced and suitable for ageing.
• Both the first and second fermentations are done using our proprietary selected yeasts. These yeasts give structure, softness on the palate, more complex aromas (honey, dried fruits, flower petals), and a fine, elegant and long lasting mousse.
• We age the wine a minimum of 15 months on the lees, in conditions of total darkness and calm, 20 metres below ground and at a constant, natural temperature between 14 and 16°C
